This classic Sauvignon Blanc comes from a four-acre block in Edna Valley's Salaal
Vineyard. The vineyard is comprised of gravel and loam, and resides on an ancient
riverbed.

The fresh green color of Sauvignon Blanc grapes and stems is easily recognizable,
promising a bright, lively wine.

After the fruit was harvested in early September 2006, we used a unique fermentation
technique: starting with one yeast then finishing off with another, in order to highlight
and bring forth the guava, grapefruit, and passion fruit flavors that we love in Sauvignon
Blanc. To maintain the crisp, clean acidity, we fermented and aged this wine only in
stainless steel tanks.

With its distinctive Sauvignon Blanc nose, tropical flavors, a touch of grassiness, and
racy acidity, it is perfect for a spring garden party in the afternoon. It also pairs
wonderfully with epicurean delights such as oysters drizzled with citrus and guava
dressing or a platter of fresh sushi.
